Pecan Squares

I'm a horrible baker, but a yummy cook. I can whip up a meal in minutes and from just what's in the house. I do have a magic sauce that I use on everything, but that's for another time. The thing that I have trouble with is the baking. I'm always so happy when I find something that I can bake and that's easy. I'll be sharing our new favorite desert recipe. 

The recipe is from Red Mill's Wheat Farina's Label of their Butterscotch Pecan Squares, but we made out own version without the butterscotch. 

Directions

Preheat oven to 350°F.

In a large bowl, beat butter and brown sugar at medium speed until creamy. Beat in eggs and vanilla.

In a separate bowl, combine flour, cereal, baking powder, and salt. Stir into wet ingredients until moistened.

Stir in nuts. Spread batter into greased 9”x 9”x 2” baking pan.

Bake at 350°F for 25 to 30 minutes or until toothpick comes out clean.

Cool in pan on wire rack; cut into squares. Dust with confectioners’ sugar if desired.

Makes 20 servings.

Thankful for Today

Today has been such a great day! It was spent cleaning, in a meeting and working. It went by WAY too fast like all the days do lately. I feel like my list is bigger then my day, but yes it was great! I make my day and work great by surrounding myself by the things I love.

I am thankful for:
My beautiful assistant for Pursuit31 who spent hours with me today helping me plan out a stylized shoot for some amazing photographer ladies this summer.
Her son who watched my son while we were in our meeting, such a blessing.
Roses, always and always thankful for my roses. The caterpillars are enjoying them this year, I hope to see lots of butterflies this year!
CreativeLive where I learned more about food photography. I'm not a food photographer, but love to take pictures of my food.
Quite time so that I can work on a print for a very special project. 
The beautiful sunset that came through my window this evening. 
The am so thankful that it's finally warm weather and summer!

Starting Again, One More Time

How many times have I said I won't give up on this place and I will make time to record my families memories? Well, it happened! I vanished into thin air once again overwhelmed with the work I overload myself with.

I've been slowly digging out of it as I always try to do and really HOPE that I stay out of a constant state of work. I've been stepping away from my studio and taking more time to get out there with my family to be what they need me to be. 

I wasn't supposed to be in my studio today, but inspiration filled me with morning and I've been here since 10am, right now it's 3:30pm. At this point the inspiration has worn off and now I'm just left with work for the rest of this evening. 

I'm getting back into blogging here regularly as that will encourage me this summer to step away from it all and just to be. I look back on those days when it was just my family, my camera and I without any deadlines and it looks all so sweet! Those memories are inspiring me to make these moments sweet in-between the rush of things. 

So here's to better posts  come, being with my family and digging deeper into my relationship with Christ!
